Tigres at Casa Regional de Salamanca

We stopped by the Casa Regional de Salamanca on a whim, attracted by the preparations for a fiesta that we noticed when walking past it earlier. Naturally, the woman behind the bar turned out to be a friend of the Burgalesa’s, so we caught up on the all the relevant news while we waited for our tigres to arrive from the kitchen.

These were spectacular tigres! Golden, crispy, crunchy, with a slightly iron-y flavour to remind you of the seaweed that used to undulate with the tides where these mussels grew up. The taste of the shellfish asserted itself, alongside a hint of cheese and bacalao – the salt cod you find everywhere in Northern Spain and Portugal. The layers of béchamel and meat were cleanly separated, and the whole was slightly dry – not slimy at all.
